Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly. At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until blended. Chill dough about 1 hour. Preheat oven to 350 degrees F (175 degrees C). Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes. While cookies are baking unwrap mints and divide each in half. When cookies are brought out of the oven, put 1/2 mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie. Eat and enjoy!

purplenurple88 INSTRUCTIONS: 1. Preheat the oven to 400 degrees F. Line a standard muffin pan with liners and then spray the liners with non-stick spray (important step!). 2. Whisk together the flour, sugar, baking powder and salt in a large bowl; set aside. In a separate medium bowl whisk together the milk and eggs, then stir in the melted and cooled butter. Add the milk mixture to the dry ingredients and whisk together until just moistened and combined. Like pancakes, lumps are okay! Divide the batter between the muffin cups and bake until puffed and firm to the touch, about 10 minutes. Let cool for about 5 minutes and then remove cupcakes to a wire rack to cool completely. 3. To make the frosting, use the whisk attachment of a stand mixer to whip the butter on medium-high speed for about 5 minutes, scraping the bowl as needed. Reduce the mixer speed to low and add the powdered sugar a little at a time, waiting until it’s mostly incorporated before adding more. Once all of the powdered sugar has been added, scrape the sides of the bowl and increase the speed to medium-high and whip until fluffy, 1 to 2 minutes. Add the maple syrup and the vanilla and whip for another minute or so to incorporate. Add the bacon and mix to combine. Using an offset spatula, spread the frosting on the cupcakes. Top with additional crumbled bacon if desired.

purplenurple88 INSTRUCTIONS: 1. Heat oven to 350°F. Spray 60 mini muffin cups. Make cake batter as directed on box. Divide batter among 5 small bowls, about 3/4 cup each. Make 5 different colors of batter by adding 1/4 teaspoon food color to each bowl; blend well. 2. Fill each muffin cup with 1 level measuring tablespoon batter, making 12 cupcakes of each color. 3. Bake 10 to 12 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely, about 10 minutes. 4. In large bowl, beat marshmallow creme and butter with electric mixer on medium speed until blended. Beat in powdered sugar until fluffy. Divide frosting among 5 small bowls, about 1/3 cup each. Using the same 5 food colors, lightly tint frosting in each bowl to match the cupcake colors. 5. Assemble each popper using 2 mini cupcakes. Cut tops off each cupcake horizontally (save bottoms for another use). Spread or pipe about 1 tablespoon frosting on cut side of 1 cupcake top. Form a sandwich by placing cut side of second cupcake top on frosting; press lightly. Repeat with remaining cupcake tops. Store loosely covered.

purplenurple88 Lol, you can probably tell I have gotten this recipe from joyofbaking.com, and that is correct. I love how the cheesecake turns out everytime. :)
8/20/2012 9:42:02 PM | Report
purplenurple88 Tips: Sometimes the surface of the cheesecake cracks. To help prevent this from happening do not over beat the batter, especially when creaming the cheese and sugar. Another reason for cracking is overbaking the cheesecake. Your cheesecake is done when it is firm but the middle may still look a little wet. Also, make sure the springform pan is well greased as cracking can occur if the cheesecake sticks to the sides as it cools. Read more: http://www.joyofbaking.com/Cheesecake.html#ixzz248mslEJ0

purplenurple88 Bake for 15 minutes and then lower the oven temperature to 250 degrees F (120 degrees C) and continue to bake for about another 60 - 90 minutes or until firm and only the center of the cheesecake looks a little wet and wobbly. (The baking time can vary due to the differences in ovens, so make sure to check that the cheesecake is firm with only the center being a little wet and wobbly.) Remove from oven and place on a wire rack. Meanwhile, in a small bowl combine the sour cream, sugar, and vanilla extract. Spread the topping over the warm cheesecake and return to oven to bake for 15 more minutes. Remove from oven and carefully run a knife or spatula around the inside edge of pan to loosen the cheesecake (helps prevent the surface from cracking as it cools). Let cool completely before covering with plastic wrap. Refrigerate several hours, preferably overnight. Serve with fresh fruit or fruit sauces. purplenurple88 GANACHE: 2 oz bittersweet chocolate 1/4 cup heavy cream Heat heavy cream until simmering in a small saucepan (you can also microwave but do it in 30 second intervals and watch it closely). Cut chocolate into chunks and put in a small bowl. Pour cream over chocolate and let sit for one minute. Stir until chocolate is melted. Let stand about 5 minutes and transfer to a squeeze bottle. Drizzle over the top of cupcakes.

purplenurple88 ANYWAYS, HERE'S THE FROSTING RECIPE W/ INSTRUCTIONS: 4 egg whites 1 cup sugar 1/4 tsp cream of tartar Pinch of salt 1 tsp vanilla extract Set a clean stainless steel or other heat proof bowl over a pan of simmering water to create a double boiler. (I just use my KitchenAid bowl for my stand mixer to avoid having to transfer.) Add all ingredients except vanilla and whisk to combine. Heat, whisking almost constantly, making sure to scrape the sides of the bowl frequently until the mixture reaches 160 degrees. Transfer to mixer/mixing bowl fitted with the whisk attachment and continue mixing, increasing speed slowly to high speed until the frosting holds stiff peaks. Add vanilla extract and beat until just incorporated.

purplenurple88 INSTRUCTIONS: Combine flour, cake mix, baking powder, sugar and salt in a bowl and mix. Add 1 cup of milk, egg and vanilla extract and stir until smooth. You want the batter to look like regular pancake batter; not too thin, not too thick. This will vary greatly on the brand of cake mix you use. Start with 1 cup of milk and add more if needed. I suggest a small taste test as well to see if the pancakes are flavored enough. Preheat a skillet on medium heat (I use an electric grilled and turn it to 250 degrees). Fold desired amount of sprinkles into batter. Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more. purplenurple88 Here's what you do to make Baked Nutella Doughnuts: 1. In the bowl of an electric mixer fitted with the dough hook attachment, combine the flour, yeast, sugar, salt, and eggs. 2. Heat the milk to just below boiling, then remove from heat. Add the 5 tbsp. of room temperature butter and whisk until well-combined. Start up the stand mixer on low speed. Once the ingredients in the bowl are combined, add the warm milk mixture in a steady stream. 3. Continue to knead for 5 minutes, until you have a stretchy, very thick and sticky batter (It does not come together in a smooth, rounded ball like yeast bread dough.). 4. Cover with lightly greased plastic wrap and allow to rise in a warm place for about 1 hour, or until doubled in size. 5. Tip the dough onto a well-floured surface and knead for about 30 seconds, until it is no longer unmanageably sticky. 6. Pat out to 1/2 inch (1 cm) thickness. 7. Cut out the doughnuts with a 2-2 1/2 inch (5-6 cm) biscuit cutter (they may seem small, but keep in mind they will at least double in size). 8. Place each disc onto a parchment-lined baking sheet, about 2 inches (5 cm) apart. Cover with lightly greased plastic wrap and let rise in a warm place until doubled in size, about 45 minutes to 1 hour. Don't be worried if they rise a little unevenly, baking will sort them out. 9. When ready to bake, preheat oven to 350 degrees F (180 degrees C). Remove plastic wrap and bake in the center of the oven for 10-12 minutes - until risen, puffed, and very lightly golden; you'll be able to just about smell them wafting out of the oven. 10. Once baked, brush each doughnut with the 3 tbsp. melted butter, top and bottom. Toss each buttered doughnut in a shallow dish filled with the 6 tbsp. superfine sugar, then leave to cool completely. 11. Once cool (which doesn't take long), prepare the nutella filling. Beat all ingredients together on high speed (using a handheld mixer or stand mixer fitted with the paddle attachment) until fluffy. Add more cream as needed. Place a filling tip (I used a Wilton 230) into a small piping bag. Fill the bag with nutella fillling. 12. Grab a doughnut and push in the tip, twisting just enough to make an entrance into the doughnut. 13. With the tip inside the doughnut, gently squeeze the bag, pulling back as you do so. Fill just until you see the nutella reach the surface (Anymore and you'll have on loaded doughnut, and it will overflow!) 14. For best presentation, serve immediately. Store any leftovers in an airtight container; but beware, they do get rather sticky the day after (although they're still delicious!). Eat within 1-2 days.

purplenurple88 Here's what you do: 1. Preheat oven to 350 degrees and prep a loaf pan by greasing it. 2. In a small bowl, use a fork to finely mash bananas (I used 3). Stir in lemon juice and set aside. 3. In a large bowl, sift flour, sugar, baking soda and salt together. Stir in brown sugar. 4. In another bowl, use a whisk to combine eggs, buttermilk, oil, applesauce and vanilla extract. 5. Pour your liquid ingredients and mashed bananas into the dry ingredients. Use a wooden spoon to stir just until combined. 6. Stir in walnuts or chocolate chips. 7. Pour batter into prepped loaf pan. (If you want, cut a piece of parchment paper to fit the pan, but leave enough to come up over the edges. Once your bread is baked and cooled, you can lift those pieces of parchment paper to easily remove the bread. See photo) 8. Bake bread for about 1 hour. Check the done-ness of your bread by sticking a toothpick or knife into the center. It should come out clean. If it isn't, leave the bread in for more time. 9. Let cool in pan. As always, banana bread is better the next day. Enjoy!

Start with 2 tablespoons of milk, then add the rest if the dough is a little dry after adding the flour mixture. Sift together the cocoa, buttermilk powder, flour, baking powder and salt and add to the wet ingredients. As the dough begins to form add a splash of apple cider vinegar. The dough should be soft but not sticky. After mixing, let it rest for five to ten minutes, then roll out on parchment paper to 1/4 inch thickness dusting lightly with flour if needed. Bake for 10 minutes. 8. Remove the wafers from the oven and cool completely. 9. Combine chocolate chips with peppermint extract and shortening in a large microwave-safe glass or ceramic bowl. 10. Heat for 2 minutes, stir gently, then heat for another minute. 11. Stir once again, and if chocolate is not a smooth consistency, continue to zap in microwave in 30 second intervals until smooth. 12. Use a fork to dip each wafer in the chocolate, tap the fork on the edge of the bowl so that the excess chocolate runs off, and then place the cookies side-by-side on a wax paper-lined baking sheet. 13. *MusicGirl16* Oops...I forgot to put the instructions! Wowwww!:D Btw, Sorry the ingredients posted twice!:D DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Line 36 cupcake cups with paper liners. In a bowl, sift together the flour, baking powder, and salt until thoroughly combined and sifted. In a large mixing bowl, beat 1 cup of unsalted butter until fluffy with an electric mixer set on medium speed. Mix in 2 cups of sugar and the lemon pudding mix, and beat on high speed until very fluffy and well combined, about 8 minutes. Beat in eggs, one at a time. With the electric mixer running, beat in milk in 1/3 cup increments, alternating with the flour mixture; beat in vanilla extract, lemon juice, and lemon zest just until mixed. Fill the prepared cupcake cups about 2/3 full with the batter. Bake in the preheated oven until the cupcakes are lightly browned and a toothpick inserted into the center of a cupcake comes out clean, 18 to 23 minutes. Allow the cupcakes to cool. When cupcakes are cool, make filling; pour about 2 inches of water into the bottom of a double boiler, place over medium heat, and bring the water to a boil. Reduce heat to a simmer, and place the egg whites and 2/3 cup of sugar into the top of the double boiler. Do not allow the water to touch the upper part of the double boiler. Stir until the sugar has dissolved, and mix with electric mixer set on high speed until the meringue holds soft peaks, 5 to 10 minutes. Reduce mixer speed to medium, and beat in the butter, 2 or 3 tablespoons at a time. When butter is smoothly beaten in, beat the creme de menthe candy flavoring oil in until the flavoring is fully incorporated and the filling is fluffy, 1 to 2 more minutes. Remove filling from heat and set aside. When cooled, load the filling into a piping bag with a medium-sized round tip. To make the frosting, place cream cheese, raspberries, both amounts of tea powder, 1 teaspoon of vanilla extract, and 1/2 cup of sugar in a bowl, and beat until smooth with an electric mixer set on high speed. While mixer is running, slowly pour the cream into the bowl, and beat until the frosting forms stiff peaks, about 3 minutes. Scrape down the bowl often. Insert the piping tip into the top of each cupcake, and squeeze about half a tablespoon of filling into each cupcake. Top each cupcake with a generous dollop of frosting to serve.

purplenurple88 INSTRUCTIONS: For the cake: Preheat the oven to 350 degrees F. Coat a 9-by-13-inch rectangular baking pan with nonstick cooking spray. Line the bottom of the pan with parchment paper and coat again with nonstick cooking spray. Combine the flour, cornmeal, baking powder, baking soda and salt in a small bowl. Whisk together and set aside. Beat the butter with the granulated sugar on medium-high speed with an electric mixer until smooth and fluffy, 3 minutes. Beat in the eggs, one at a time, until combined, and then beat in the vanilla. Reduce the speed to low and beat in one-third of the flour mixture until just combined. Beat in half the buttermilk and then repeat, adding the flour in two more increments and alternating with the second half of the buttermilk. Stir in the sprinkles. Transfer to the prepared pan and spread the batter evenly. Bake until golden brown and the top springs back to a light touch, 30 to 35 minutes. Cool 15 minutes in the pan. Run a small knife around the edges of the cake to release the sides and turn the cake out onto a baking sheet. Remove the parchment paper and then flip again onto a serving platter or cutting board so the top of the cake is back on top. Cool completely before frosting. For the frosting: Place the butter and salt in a large bowl. Beat with an electric mixer on medium speed until fluffy. Add the white chocolate and beat until fluffy. Gradually beat in the confectioners' sugar and the vanilla. Increase the speed to medium-high and beat until very smooth and fluffy. Transfer 1/2 cup of the frosting to a pastry bag fitted with a small rosette tip. Frost the top and sides of the cake with the remaining frosting. For the garnish: Place the blueberries in six rows of 6 berries each in the top left hand corner of the cake. Trim and halve the strawberries lengthwise and make four rows of strawberries across the cake. Pipe 13 stars between the blueberries and use the remaining frosting to pipe a border around the bottom of the cake. Brush the berries with the melted jelly. Cut and serve.

purplenurple88 INSTRUCTIONS: 1. Preheat oven to 350 degrees and line 24 muffins tins. 2. In a large bowl, whisk eggs, oil, milk, water and vanilla. 3. Sift in cake mix and stir in sour cream. 4. Fill cupcake liners ¾ full and then place a teaspoon of Nutella on top of each one. Using a toothpick, swirl the Nutella into the batter. 5. Bake for 14-18 minutes or until the sides spring back. (The tops will stay gooey because of the Nutella.) 6. Remove the cupcakes from the oven and place directly into airtight containers so seal in moisture. 7. Buttercream: Beat the Nutella and butter for 5 minutes. Add vanilla, then alternate between adding powdered sugar and heavy whipping cream. Taste the buttercream until you reach your desired sweetness. You may need to refrigerate the buttercream before piping it onto cooled cupcakes.

purplenurple88 INSTRUCTIONS: 1. Fit a decorating bag with a multi-opening tip. This tip is used to make frosting grass or hair; it can be round or rectangular with numerous small holes. Fill the bag with the blue frosting. Pipe frosting over each cupcake in short strokes, overlapping the strands and allowing some to hang over the edges to make the frosting resemble fur. Cover the cupcakes completely with frosting. 2. Place two white candy discs at the top of each cupcake as the monster’s eyes. You can lay them flat or position them in them in the frosting so they stick up. 3. Fit another decorating bag with a round decorating tip. Fill the bag with black or chocolate frosting. Pipe dots on each white candy disc to complete the eyes. Make the monster look “googly-eyed” to resemble Cookie Monster. 4. Push a mini chocolate chip cookie into each cupcake where the monster’s mouth would be, leaving half of the cookie protruding from the cupcake. Or, pipe a half-moon-shaped mouth onto each cupcake with the black or chocolate frosting and sprinkle crumbled cookies around each mouth.

Cupcake_queen_101_ Royal icing!!! Ingredients: 3 tablespoons Meringue Powder 4 cups (about 1 lb.) confectioners' sugar 6 tablespoons warm water Makes: About 3 cups of icing. Instructions: Step 1 Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer). Step 2 NOTE: Keep all utensils completely grease-free for proper icing consistency. * For stiffer icing, use 1 tablespoon less water. **When using large countertop mixer or for stiffer icing, use 1 tablespoon less water. Thinned Royal Icing: To thin for pouring, add 1 teaspoon water per cup of royal icing. Use grease-free spoon or spatula to stir slowly. Add 1/2 teaspoon water at a time until you reach proper consistency.

But if you do your own schedule (like once a month, once every two weeks, etc) be sure to tell me or else I’ll assume you don’t get on much. Yes, you too, the position holders have to tell me by Friday your schedule or else I’ll give away your position. I’m sorry to say this, but I need people who post recipes since this IS a baking club. The one position holder that is safe from having her position taken? She is smiles48. Thanks for joining this club, I’ll post a recipe soon! “This has been another news update by purplenurple88. purplenurple88 Another way to make Earth Day cupcakes is by having simple vanilla cupcakes. Have two bowls ready with white frosting. Color one bowl's frosting with green, and the other one with blue. Get a piping bag (or a plastic bag) and fill half the bag with green and in the other half, blue! If using a plastic bag, cut a corner off on the bottom of the bag. Pipe onto the cupcakes. Top with white sprinkles (like the first cupcake design) and now you have Earth Day cupcakes! Heehee, I made this ideas myself so sorry if these ideas don’t really say Earth Day but I just wanted to put in the colors of the Earth (blue, white, green) onto a cupcake. If you also don’t have plastic bags handy, use an offset spatula to frost the cupcake. Just mix the two frostings (the blue and green) together but not too much as to create another color! Have it partially mixed and put a decent amount of it onto the cupcake and spread it around however you want. “This has been another decorating idea by purplenurple88! We shall have a recipe next week so stay tuned. “

purplenurple88 What time is it? ADVENTURE TIME! JK but it is time for another recipe! Chocolate Shortbread Dominoes Recipe 1 ½ cups unbleached all-purpose flour plus some extra for rolling dough, 2/3 cup unsweetened Dutch-process cocoa powder, 1 teaspoon kosher salt, 1 cup (2 sticks) unsalted butter at room temperature,1 cup confectioner’s sugar, 1 teaspoon pure vanilla extract, ½ cup M&M’s Minis. Step 1: Combine the flour, cocoa powder, and salt in a medium bowl. Place the butter and sugar in a large bowl and beat together with an electric mixer on medium until fluffy, about 3 minutes. Beat in the vanilla. Beat in the flour mixture on low until the dough is smooth. Step 2: Divide the dough in half. Lay some plastic wrap underneath each piece and press each into a 6-inch square. Wrap the plastic around each square of dough and refrigerate for 30 minutes. Step 3: Preheat the oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper. Step 4: Working with one piece of dough at a time (keep the other refrigerated), roll out the dough to a 1/8 inch thickness on a lightly floured work surface using a lightly floured rolling pin. Be sure to turn the dough often so it doesn’t stick. Step 5: Use a sharp paring knife and a ruler to cut the dough into 1 ½ by 3 inch rectangles, rerolling scraps and recutting until all the dough is used. Transfer the cookies to one of the prepared baking sheets, leaving about 1 inch between each cookie. Use the dull edge of the knife to make an indentation widthwise across the middle of each cookie. Step 6: Arrange M&M’s Minis on top of the cookies so the cookies resemble dominoes, pressing on the candies lightly so they adhere. Step 7: Bake the cookies until they are firm, 12 to 14 minutes. Slide the entire parchment sheet with the cookies to a wire rack and let them cool completely. Repeat with the remaining dough square and the second prepared baking sheet.
