Make your own mochi ice cream

 

If you haven’t had mochi (a Japanese rice cake), you are seriously missing out. It’s sweet, chewy, and delicious. And what's even better than that? Mochi ice cream! End your summer on a sweet note by trying out this amazing recipe.

What you’ll need:

- Your fav ice cream flavor
- ¾ cup of sweet glutinous rice flour
- ¼ cup of sugar
- ¾ cup of water
- Additional rice flour

Here’s what you do:

1. First, scoop your ice cream into eight individual balls and freeze them. Your scoops should be about as big as an egg.

2. To make the mochi, whisk the flour and sugar together in a microwave-safe bowl. Add in the water and continue whisking.

3. Cover the bowl with plastic wrap and microwave for 1 minute. Stir the mixture, and then microwave it for another minute. Stir again, and microwave for another 30 seconds or until the mixture is translucent.

4. Place a piece of parchment on the table, and cover it with additional rice flour. Place the mochi onto the parchment and add more flour. Wait for it to cool.

5. Use a rolling pin to roll out the mochi so it’s about ¼ inch thick. Add more flour if necessary.

6. Place the parchment paper on a baking sheet and refrigerate for about 15 minutes or until the mochi is firm and cool. 

7. Use a cookie cutter to cut rings into the mochi. Remember, it’s better to have circles that are too big than too small.

8. Place a plastic wrap underneath each mochi circle.

9. Place an ice cream ball on top of each mochi circle, keeping the plastic wrap underneath the mochi, and mold the mochi around the ice cream without removing the plastic wrap. Twist the plastic wrap at the top in order to hold the mochi and ice cream together very tightly. 

10. Place the mochi ice cream back into the freezer until you are ready to serve it.
