Salmon Filet

Fish is a very healthy source of protein, but salmon has the added benefit of being great for your skin!

What you’ll need:
-Salmon filet
-Lemon juice
-Light mayonnaise
-Dijon mustard
-Dill

What you’ll do:
Take a fresh filet of salmon.  Brush with lemon juice. 

Mix 2 tablespoons of both mayo and mustard (dijon is best, but other mustard works too). Spread on top of the fish. Sprinkle with dill. 

Broil in oven (carefully) and not too close to the flame for 5 minutes.  Check to see if cooked through (you might have to poke some holes to see; salmon turns light pink when cooked). Watch so you don’t burn the fish…or yourself!
 
OR

Place the salmon on a sheet of cooking parchment. Add a squeeze of lemon, sprinkle with a bit of salt, pepper and dill, and add strips of onion, carrot and/or red peppers. Wrap up the parchment (you can use foil). Bake at 375 degrees for 15 minutes.  Steamy, healthy tasty!
