In our lunch bag: Bagel BLT


Sometimes, girl just wants a good old-fashioned bagel for lunch. Dress up the standard plain 'n' cream cheese order by subbing whole wheat in for plain white and then piling on the goodies. Read on!

Ingredients:

1 whole grain bagel

1 schmear of reduced fat cream cheese (goat cheese works too!)

1 piece cooked turkey bacon

1 large slice of tomato

1 leafy piece of lettuce (your pick)

Directions:

1. To make the turkey bacon: In a medium skillet, place as many slices of bacon as you need without overlapping the slices. Turn the heat on medium and put on a lid. Watch the bacon carefully so it doesn’t burn. Turn down the heat if the grease starts to splatter.

IMPORTANT: Bacon grease is very hot – be careful not to splatter any on your hands or arms. When the bacon is crisp, turn off the heat, and remove it with tongs. Place on a plate covered with two pieces of paper towel.

2. Carefully cut the bagel with a serrated knife. It is up to you if you want to toast the bagel first. Smear some cream cheese on one side of the bagel. Crumble the turkey bacon and press it into the cream cheese. Place the tomato slice on the cream cheese; top with lettuce and the bagel top. Cut the bagel down the middle if you want.

Other ideas: Mash a few slices of avocado on one side of the bagel. Chop up a green onion and mash it into the cream cheese side of the bagel.
