Fruity Jello (Minus the Package)

This is real Jello—free from artificial ingredients. Put in any fresh fruit that you like except for kiwis, pineapple and papaya, which contain enzymes that stop the Jello from jelling. We like red Jello so we bought a cherry- blend juice at the health food store that had more flavor than the watered down “Juicy Juice” at the supermarket.

What You’ll Need:
Serves 6   
1 1/2-2 cups fresh, sliced strawberries
2 1/2 cups 100% juice—a berry blend
3 envelopes “Knox” unflavored gelatin
1 cup of the same juice
Possible garnish: whipped cream and a berry

What You’ll Do:
1. Wash the strawberries and pat dry with paper towels. Cut off the stem then slice the rest of the strawberry into thin circles.

2. Pour 2 1/2 cups juice into a small saucepan. Heat over medium heat until steaming.

3. Pour one cup of juice into the glass measuring cup. Open the “Knox” packages and sprinkle over the juice. Let sit for five minutes. Have a pan ready for the Jello. It can be a shallow bowl, casserole, or Pyrex pan.

4. Carefully pour the hot juice into the pan. Add the “Knox” juice and stir until it’s dissolved. Add the fruit and distribute so it’s not all in one spot. Make a level spot in the refrigerator for the pan. Refrigerate for at least two hours.

To Serve: Cut into squares with a paring knife and serve with a pancake turner. Top with whipped cream and a berry if you like.

Other Ideas: Use a metal cookie cutter to make Jello shapes for parties or just for fun. You’ll want the Jello to be about a half-inch thick so use a 9” x13” baking pan.
