Give your grilled cheese a *major* upgrade!

 

Feeling in the need for some comfort food? You can't go wrong with a classic grilled cheese, but why not take it up a notch? These recipes will take this delicious sandwich to a whole other level!

Grilled cheese for breakfast?! Yes please! Wake up happy with this waffle grilled cheese recipe!

What you'll need:

2 slices of bread

2 tablespoons of salted butter

Sliced cheese

Directions:

1. Turn on and preheat the waffle iron.

2. Spread butter on one side of both slices of bread.

3. Place cheese on the unbuttered side of one slice of bread. Top with the other slice of bread, butter side out.

4. Place the sandwich in the waffle iron. Be careful not to completely smash the sandwich. Cook for 3-5 minutes or until the bread is brown and the cheese is melted. Enjoy!

Turn your grilled cheese into a finger-food masterpiece with this roll-up recipe!

What you'll need:

1 slice of bread for each roll that you would like to make

Sliced cheese

2 tablespoons butter

Directions:

1. Flatten the slices of bread using a rolling pin to 1/4-inch thickness.

2. Place a slice of cheese onto each slice of bread and tightly roll them up.

3. Melt butter in a skillet. On medium-high heat, add the rolls to the skillet. Do so in batches if needed.

4. Cook for approximately 3-4 minutes, or until the bread is golden and the cheese is melted. Serve and enjoy!

Dare to be different? Skip the bread for a zucchini-crusted grilled cheese!

What you'll need:

4 cups freshly shredded, raw packed and undrained zucchini

2 large eggs

1/2 cup shredded parmesan cheese

3/4 cup all purpose flour

1/4 teaspoon black pepper

2 thick slices of cheese

Directions:

1. Use parchment paper to line a baking sheet. Preheat the oven to 450 degrees Fahrenheit.

2. Shred the zucchini in a bowl and let sit for 10-15 minutes. Then drain the extra water and use a towel to dry the zucchini.

3. Combine the zucchini, eggs, flour, pepper and parmesan and mix thoroughly.

4. Use a spatula to divide the batter into 4 squares on the baking sheet. They should be about 4.5"x4.5" and 1/4" thick.

5. Bake the squares in the oven for 15 min or until light brown. Then flip the squares and cook for another 10 min or until light brown.

6. Take the squares out of the oven and flip again.The slightly softer side is where you will place the cheese.

7. Place cheese between two slices of "bread." Cook as you would a traditional grilled cheese, or broil in the oven for about 5-10 min. Enjoy!
