Rise and shine with this matzo brei recipe!

This year's Passover celebration may be unconventional due to the coronavirus outbreak and social distancing, but certain traditions still stand.

For me, serving a portion of my grandpa's signature matzo brei was a given. Matzo brei—pronounced "mat-zah br-ai"—is a breakfast treat of Ashkenazi Jewish origin made of matzah fried with eggs. The recipe can be made either savory or sweet, altered by ingredients from sauerkraut to onion to cinnamon to yogurt. Although my grandpa is quarantined and cannot be with us at Seder, he shared his special take on the recipe with the rest of my family so that he could be with us in spirit. Dig into the dish (instructions shared below!) to spread love this holiday in your household.

Ingredients:

4 large eggs

2 sheets matzo 

1 tbsp milk

1 tbsp butter

Salt and pepper

Cinnamon sugar to taste

Instructions

1. In a bowl, scramble eggs with a whisk along with 1 tbsp milk until eggs are fluffy.

2. Place matzo in a large bowl. Soak in 1/2 cup warm water for a minute until it just begins to soften. Let it get soft, but don't let it turn mushy!

3. In a skillet or frying pan, melt 1 tbsp butter over medium heat.

4. Break matzo into small pieces. Squeeze out excess water into the bowl as you place the pieces into a large skillet. Sauté matzo pieces over medium heat for about a minute.

5. Pour scrambled egg mixture over matzo pieces. Stir eggs with a spatula for about 2 minutes over medium heat. As you're cooking, sprinkle in a pinch of salt and pepper and cinnamon sugar to taste.

6. Serve matzo brei immediately with a small side of applesauce, preserves or maple syrup.
