Overnight fruit salad

This fresh fruit salad comes from an Italian dessert called "Macedonia di frutta fresca" which is a combination of fresh or dried fruit, jam or marmalade, and wine or fruit juice. (We're using juice.) What's great about this salad is that you can prepare it a day ahead so it's ready for your eat-and-run breakfast or as a fruit cup in your sack lunch. The fruit juice prevents the fruit from turning brown. If you like bananas, add them just before serving.

What You’ll Need: Serves 3-4

Cut up about 3 cups fruit -

1 kiwi
2 apples
1 navel orange
1 cup red or green grapes

1/2 cup fresh orange juice
2 tablespoons orange marmalade

What You’ll Do:

1. In a large mixing bowl, stir together the orange juice and marmalade. Wash the apples and grapes and pat dry with paper towels. Cut the kiwi into quarters. Peel the kiwi pieces with a small paring knife. Cut the kiwi into pieces and put into the bowl.

2. Cut the orange into quarters, peel off the rind, then cut into bite-sized pieces. Cut the apples into quarters, cut out the apple seeds, and cut into bit-sized pieces. Add the grapes. Mix the fruit and juice mixture together with a wooden spoon.

3. Cover the bowl with plastic wrap or put the fruit into a plastic container. Refrigerate overnight or for at least an hour if you want to eat it right away. Serve with a tablespoon of yogurt if you like. (Omit the yogurt if you're packing the salad in your lunch bag.)
