Ice Cream Sandwiches

After all that hard work—months of grueling exercise and eating healthy veggies, fruits and proteins—you most def deserve a treat! Serving yourself up a bowl of ice cream or chowing down on cookies every now and then is totally OKAY and a must do!

What You’ll Need:

10 oatmeal, ginger bread or chocolate cookies, 3-3 1/2 inches in diameter (that’s across the cookie)
1 pint vanilla ice cream or frozen yogurt (or your favorite flavor), in a round container

What You’ll Do:

1. Freeze the cookies in a plastic bag at least one hour until hard. Make sure the ice cream is in a part of the freezer where it’ll get rock hard.

2. Have scissors, plastic wrap, plate, and knife ready. When the cookies and ice cream are frozen solid, take them out of the freezer. Carefully cut the ice cream carton down the side so you can remove the ice cream chunk.

3. Place the ice cream on its side on a plate or clean cutting board. Carefully slice, using a chef’s knife, five one-inch circles. Don’t waste time or you’ll have an ice cream puddle.

4. Place the circles on five of the cookies. Put the other cookies on top of the ice cream. Trim away any excess ice cream. Wrap each sandwich quickly in plastic wrap and freeze until eating time.

Other Ideas: Make up your own combinations such as oatmeal cookie/cinnamon ice cream, or chocolate cookie/mint chip or raspberry ice cream.

Non-Dairy Sandwiches: Use a pint of soy ice cream. (We like “Soy Dream”.)
