3 grapefruit recipes that'll brighten your day

 

 

Citrus season is the only reason that we're actually OK with winter. And that's especially thanks to the biggest, baddest citrus fruit of all: the grapefruit. This beloved tangy treat can make us feel like we're relaxing in the sunshine even on the snowiest days. Plus, they're totally delicious, healthy, and can even give your drab winter skin a boost (um, score!). Check out some of our fave easy-to-make grapefruit recipes below. Bon appétit, girlie!

    Broiled grapefruit with honey yogurt and granola 

    What you need:

    • 2 grapefruits
    • 2 tbsp honey
    • 1 pinch of ground ginger
    • 2 tbsp Greek yogurt
    • 1 tbsp brown sugar (or raw sugar)
    • 1 pinch of cinnamon
    • 1/4 cup of granola

    Directions:

    1. Preheat the oven to 350°F.

    2. Using a knife, slice off about 1/4 inch of the base off the grapefruit end and stem end. Then, cut the fruit in half (be careful when doing this and watch those fingers!)

    3. Place the grapefruit halves face up on a baking sheet or shallow baking pan.

    4. Drizzle both grapefruit slices with honey. Dust with ground ginger, cinnamon, brown sugar (and/or sugar in the raw).

    5. Broil for 5-8 minutes, until the sugar turns a deep amber. Keep an eye on during broiling to avoid burning.

     

    6. Let them cool for a few minutes then top it off with yogurt (swirl in honey if you wish) and a handful of granola. 

    7. Using tongs, carefully move each half from pan to bowl for serving.

    Grapefruit and avocado salad

    What you’ll need:

    • 1 grapefruit
    • 1 avocado
    • 1 head of ramaine lettuce
    • 3 tbsp extra-virgin olive oil
    • 2 tbsp lime juice
    • 1 pinch chile flakes
    • 2 tbsp chopped fresh chives

    **Note: this recipe makes approx. 2-3 salad bowls**

    Directions:

    1. Cut up your lettece into a bowl, then peel and slice grapefruit over a bowl and let the segments drop, along with the juice.

    2. Add chile flakes, lime juice and olive oil and stir in. Season with salt and pepper to taste.

     

    3. In a seperate bowl, arrange the lettuce and avocado.

     

    4. Drizzle the dressing and the grapefruit over the top. Sprinkle chives on top.

    Grapefruit and brown sugar muffins

    What you’ll need:

    • 1 1/2 cups brown sugar
    • 1 cup softened butter
    • 1/4 teaspoon vanilla extract
    • 3 eggs
    • 1 cup flour
    • 2 grapefruit

    Directions:

    1. Preheat the oven to  350°F and grease one 12-cup muffin tin. 

    2. In a bowl, combine the softened butter and brown sugar.

    3. Stir in the eggs, one at a time and then the vanilla.

    4. Now stir in the flour until just combined. 

    5. Scoop batter into muffin pan. Be sure to fill the cups 1/2 full (no more). 

    6. Peel the grapefruits and remove the seeds.

    7. Cut the grapefruit into slices and place over the batter. If any of slices are too large, cut them a bit, so they fit in the cups. 

     

    8. Bake at 350°F for 20-25 minutes, until a toothpick inserted in the center comes out clean.
