Yummy and easy vegan meals to make ASAP

 

It can be hard out there for a veggie lovin’ lady. Whether you’re trying to eat more cleanly or have sworn off meat for good, you may find yourself recycling the same healthy-but-humdrum meals from day to day. You deserve better, girl. Going veggie one or more times a week is awesome for your health and can even help the environment, so treat yourself with these ah-mazing vegan recipes.

    PB&J Oatmeal

    There is nothing better than a classic PB&J – that is, except for a delish and nutrish breakfast version. This oatmeal is almost as simple as making the real deal!

    What you’ll need:

    • 1/2 cup quick oats
    • 3/4 cup almond milk or water
    • 2 Tbsp creamy natural peanut butter
    • 1 Tbsp jelly
    • 2 Tbsp of unsalted peanuts

    What you’ll do:

    1. In a medium microwave-safe bowl, mix the oats and milk or water. 

    2. Cook on high for 3-4 minutes. Keep checking to make sure it does not overflow.

    3. Add in peanut butter, jelly and peanuts (if you want) and mix well.

    Avocado quesadilla 

    You know what they say - an avocado a day keeps the doctor away! Okay, just kidding-- they don’t really say that, but they should. Avocados are loaded with healthy fats and taste incredible. Check out this tasty and creative quesadilla alternative:

    What you’ll need:

    • 1 avocado
    • Diced vegetables of choice (ex. spinach, onions, peppers, etc.)
    • 2 tsp. nutritional yeast
    • Seasonings of choice (ex. cumin, garlic, etc.)
    • Salsa (optional)
    • 1 large tortilla

    What you’ll do:

    1. Smash the avocado and spread it out on one half of the tortilla. 

    2. Sprinkle with nutritional yeast and any type of seasoning.

    3. Layer vegetables of your choice on top. You can also add in the salsa or save it for dipping.

    4. Fold over the top half of the tortilla, and place on a skillet over medium heat. Heat for a few minutes on each side until crisp.

    Vegan Hawaiian Pizza

    Who says comfort food has to be all bad for you? This healthy pineapple pizza recipe is all about low-cal yummy goodness.

    What you’ll need:

    • 1 whole-wheat refrigerated pizza crust dough
    • 2 handfuls of chopped spinach
    • 1 Cup of marinara
    • 1 Cup of pineapple chunks
    • 1/2 Cup of Yves Meatless Canadian bacon
    • 1/2 cup of Daiya Vegan Mozzarella cheese

    What you’ll do:

    1. Preheat oven to 425.

    2. Roll out dough on an oiled pan and spread marinara evenly over it.

    3. Add cheese, pineapple chunks, and bacon to pizza.

    4. Bake until cheese has melted and crust is crisp (about 15 minutes).
