HEALTHY RECIPES: Capri Salad

Fresh mozzarella is a soft, fresh ball of cheese packed in water that’s not left to age in a cheese cellar. The longer the cheese ages, the more the moisture evaporates, resulting in a cheese with a stronger flavor and a harder texture.
 
Sometimes you’ll even see mozzarella balls called “buffalo mozzarella” (mozzarella di bufala). Buffalo mozzarella definitely tastes better but it’s more expensive because it’s imported from Italy. Stick with cow’s milk mozzarella.

What You'll Need: Serves 4-5
 
  • 2 large fresh mozzarella balls
  • 4 medium tomatoes, about the same size as the mozzarella balls
  • 16 fresh basil leaves
  • 1 cup lettuce leaves for the plate
 
What You'll Do:
 
1. Slice the mozzarella balls into quarter-inch slices. (Sometimes it’s easier to slice this cheese with a serrated or steak knife.) Cut the stems out of the tomatoes using a short paring knife. With your serrated knife, slice the tomatoes across the stem into quarter-inch slices.

2. To Assemble: Spread the lettuce out on a dinner plate or platter. Place a slice of tomato, cheese, basil so each slice is overlapping. Continue the circle in the same order until everything is used up. Drizzle with dressing and sprinkle with salt and pepper just before serving.

 
Hot Tip: Cover with plastic wrap if you’re not serving the salad immediately and keep in a cool place. Never refrigerate tomatoes because the cold will change the tomato’s texture.

Other ideas: You could also alternate sliced cucumber or thin slices of red onion.

 
Dressing:
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
Stir together in a glass measuring cup and pour over the salad. Season with salt and freshly ground pepper.
 

Tools:

  • Serving plate or platter
  • Cutting board
  • Serrated knife
  • Glass measuring cup

MOD! Ok so my favorite food ever is just plain old pasta with cheese and olive oil. Also, i eat this like two times a week. Is there anything that i can put in it to make it healthier? Thanks!

i have an awesome recipe.
Lime Flavored Tilapia
> 3 fillets of tilapia
> zest and juice of 1 lime
> red onion slices
> lime slices
> fresh cracked black pepper
> salt

make a tinfoil "pan" with 3 or 4 sheets of tinfoil
put the tilapia fillets on the tinfoil and put zest, juice, salt, pepper and onion on the fish.
cook until finished ( no more pink)
serve with betty crocker instant mashed potatoes and lemonade....

Hey babe,

some guys do that too! It's just something that people do to focus on something that tastes good instead of whatever is bothering them. The thing to do is to try to find a healthy way to channel that bummed out energy into something more constructive.

Hey babe, I'm not a doc so I can't tell you that but it sounds fine as long as you're eating healthy and getting enough exercise. Don't put so much pressure on yourself! Enjoy and be proud of being you!

MOD help. I don't like veggies, except corn. I want to try and eat healthier but well i don't like veggies. and some of ur recipes have veggies in em. I like fruits though. any ideas to help me? thanks!

 

the best way to start liking veggies is to start trying them! you'll find some that you like in time

hey lynae! i gotta question:
my family luves baseball- so do i! we watch it on tv, mostly the yankees and my poppop and dad likes the mets. my grandma and mom were watching david ortiz's press conference about using performance enhancing steroids in 2003. david ortiz is on a baseball team (the red sox). i enjoyed watching it. its going on now. IS IT BAD THAT I LIKE WATCHING IT?? im not saying i wanna use steroids i just like watching it cuz something like a mystery is going on now. HELP!

I'm not a professional, so I'm not sure if that's the average weight for you. The most important thing is staying healthy and fit, girlie. Just remember to get in balanced and nutritious meals and add some work outs to burn calories! <3, Sharon

haha this salad definitely looks like one of those you get at fancy restaurants.. 2 weeks ago we went to this fancy restaurant for my grandma's birthday and i ordered a shrimp salad.. turned out to be some pieces of lettuce, shrimp, and some other stuff, and i was like "umm... where's my salad?"
