HEALTHY RECIPES: Cous Cous Salad

cous.jpg

Cous cous are tiny pieces of semolina flour, the same flour used to make pasta. You could say that cous cous is a Middle Eastern pasta dish. Besides the shape, the difference is that you don’t boil it; simply soak it in boiling water.

What You'll Need:

1 cup quick-cooking cous cous, whole wheat
1/2 cup frozen baby peas, defrosted
1/2 sweet red pepper
2 green onions
1/2 cup chopped parsley
1/4 cup toasted pine nuts
1 teaspoon ground cumin

1/2 teaspoon salt, more to taste

1/2 teaspoon grated orange rind

2 tablespoons each: extra-virgin olive oil, orange juice

Optional: A dash or 2 of hot sauce

What You'll Do:

1. Heat 1 cup of water in a medium saucepan until it boils. Turn off the heat and add the cous cous. Stir until all of the grain is wet. Cover and let sit for 10 minutes. Remove the lid and fluff it with a fork. Heat a skillet over medium heat. Add the pine nuts, stirring every few seconds, until they’re light brown. (Watch carefully, they burn fast.)

2. Slice the pepper into thin strips and then dice. Slice the green onions into small circles. Finely chop the parsley. Add all the ingredients to the cous cous pot and stir. Eat or refrigerate until lunch packing time.

Other Ideas: Top the salad with crumbled feta cheese. (Buy a hunk and crumble it yourself – it tastes fresher.) For more protein, add 1 cup of canned chick peas, drained and rinsed.

Tools:
  • Medium saucepan with lid
  • Measuring cups and spoon
  • Skillet
  • Cutting board
  • Chef’s knife
  • Small grater

i have a prob.
My BGF just told me he loved me... and i love him back but if i go out with him i'm afraid it will make it difficult to go around school because he's 2 yrs older... and i m afraid for mine and his friendship even though he said "i think i love you more than my best friend ever, but even if it doesn't last forever i'll always love you as my best friend ever and will always take care of you, no matter what."

It sounds like this boy means a lot to you. If you love him and have such an amazing relationship with him, then i think you guys should give it a chance. If you guys are best friends you'll know how to fix any problems that may occur if you break up. Note the use of if. You guys might be the perfect couple. Give it a chance. Don't be afraid of what might happen (but probably wont happen). Live in the moment. Good luck! xoxo kerra

Want to eat healthy but not ready to go full vegetarian?
Solution: Go semi-veg! This means that you will not eat cow and pig but still eat chicken and turkey (basically cutting out red meat). Or, you can give up all of those and just eat seafood.

Solution2: Moderation! Instead of every meal, eat just once a day or maybe once every couple days.

Solution3: Lower quantities! The average American eats 6 servings a day (2 servings per meal) when all they need is 3 a day. How about you eat meat every meal but only half a serving each meal?

Mod!!!!
i am going to a sleepover tonite, and i have some SERIOUS cramps(unfortunetly its that time of the month)- is there any way to relieve them???????

I usually take Tylenol or another pain medicine. Ask your mom if you could take something, and that should relieve them temporarily!
