Mango Lassi

A "lassi" is a beverage that's found in India using cow, sheep or goat's milk yogurt, a food staple for more than 4,000 years. Mangos can be difficult to cut so ask for help. A mango is ripe when its slightly soft when you press into the skin.
 
The Indian version asks for rose water, a Middle Eastern ingredient, but since it's difficult to find I used almond extract. Try the lassi without the almond extract first; maybe you won't want to add it.
 
What You'll Need: Serves 2
1 ripe mango
1 cup plain yogurt (non-fat, low-fat, or whole milk)
1 cup cold water
1 tablespoon sugar
4 ice cubes

You decide: a drop or 2 of almond extract
 
What You'll Do: 
1. The safest way to cut a mango is to slice off thick slices, getting as close to the pit as possible. Then peel off the skin using a paring knife. Cut the mango into chunks.

2. Put all the ingredients in the blender. It’s always a good idea to place one hand on the blender top to hold it down, then press start. Starting the blender at low speed, blend the lassi until smooth. Pour into tall glasses.
