HEALTHY RECIPES: Breakfast Burrito

This is a delicious, fill-you-up ten minute breakfast but it’s too messy to eat on the bus. So eat it in your dad’s car. (Just kidding.)
 

What You'll Need: Serves 1 - Vegetarian

 

1 whole wheat flour tortilla
1 teaspoon olive oil
1 egg
1 green onion
1/4 grated cheddar, Muenster, or pepper jack (or your favorite cheese)
1 tablespoon salsa

 
Optional: diced tomato, sliced avocado, chopped cilantro
 
What You'll Do:
 

1. Scramble the egg in a small mixing bowl using a fork or whisk. Chop the green onion into thin circles and add to the egg.

 
2. Grate the cheese and set aside on a plate. Chop or slice any other ingredients. (Slice a tomato into half-inch slices; then dice one slice. Cut open an avocado and pull apart. Slice quarter-inch slices across the avocado, then use a soup spoon to remove the slices.)
 
3. Heat a large, non-stick skillet over medium-high heat for about 30 seconds. Place the tortilla in the skillet for about 15 seconds, then turn it over and heat the other side for about 15 seconds just so the tortilla softens. Put it on the kitchen counter and cover with a clean dishtowel to keep it warm.
 
4. Put the oil into the hot skillet. When it’s hot, spread it around with the turner, then pour in the eggs. Stir until they’re cooked completely. (You no longer see any runny stuff.)
 
5. Remove the pan from the burner immediately. Place the tortilla on the plate. Spoon the eggs down the center of the tortilla, almost to the ends. Sprinkle with cheese and any other of the ingredients that you wanted to add.
 
6. Spoon on the salsa (and sour cream if you’re using it), roll up the tortilla, and cut it in half for easier eating.
 
Other Ideas: Feel free to add what you like; sautéed sweet pepper strips or sliced mushrooms, leftover cooked veggies, or sliced black olives. (Heat the vegetables in the skillet before you begin making the burrito. Put them on your plate and cover with foil until you need them.)

Small mixing bowl
Wire whisk
Grater
Measuring cups, spoons
Cutting board
Paring knife
Wooden or plastic turner
Large, non-stick skillet

My mom and i make FANTASTIC breakfast burritos!
what you need are:
1 egg
1 tortilla
1 potato
1 handful of ur fav cheese shredded

Scramble the egg over the sink and cook it on the stove. Sprinkle the cheese on top. For the potato dice it up and cook it with some salt and a drissle of olive oil. Then mix egg and potato, put in tortilla, wrap it up and EAT IT! Smile

This recipe is delish! Usually my breakfast consists of cereal and a glass of orange juice. This was such a great and healthy choice that I've decided to find more vegetarian recipes so I can enjoy food like this everyday!

So I'm tryin to lose weight..like 40 lbs! I've been exercising, and i have a plan on paper and motivation all over my room. My problem is eating. I seem to have a habit of eating when I'm bored....What can I do to stop?? I really want(and need) to lose this weight! Please help...

Why no carbs in the morning? Carbs aren't bad for you - only if you eat them in excessive amounts, and don't exercise. Judging by your username you do lots of sports, so really, you have nothing to worry about. It's been proven that low-carb diets don't work. They're just a phase of the past.

THIS RECIPE ROCKZZZ!!!! I tried it this morning it's soooooooo GOOD!!! and filling which is good because you wont have to snack all the time. It helps ya lose weight! Try Cayanne pepper in it and spinach! it really good!

Recently, I've been on this HUGE breakfast burrito kick! Usually I put eggs, mushrooms, beans, red salsa, red bell peppers, yellow banana peppers, and onions. Green onions would be a great addition.

I really think it's a great meal to include whole grains, veggies, and calcium. With a glass of milk and a clementine orange, it's all your (vegetarian) food groups in one!! YUM.

hey luv! i totally think you should go for it! if there is a dance coming up (i am homeschooled so i would not know)then you should ask him! do NOT ask him to go on a "date" with you that is too forward. but, you CAN ask him to "hang out" sometime and, who knows, it might turn into something. if not do not be upset you still have a friend. good luck!
