Pasta Veggie Salad

 

A new year means fresh start! If your resolution is to eat healthier, we've got a great recipe for you. This yummy pasta salad has the perfect balance between carbs and ultra healthy veggies. Hello, healthier YOU!


Psst! Be Creative and choose your favorite pasta and veggies.


What You'll Need:

2 cups spiral (fusilli) pasta, uncooked
2 cups diced raw vegetables (red peppers, radishes, broccoli, carrots, green onion, corn, whatever)
½ cup Italian parsley (flat leaf), chopped
2 tablespoons freshly grated Parmesan or Romano cheese
¼ cup bottled Italian dressing (we used “Paul Newman’s”)


What You'll Do:

1. Boil the pasta for about 6-7 minutes until tender. Pour into a colander and rinse with very cold water until the pasta has cooled. Let drain well in the sink.
 

2. Chop up the raw veggies and parsley. In a large bowl, toss together the pasta, veggies, and cheese. Toss again with the dressing. Keep refrigerated until ready to eat. Top with extra cheese if you like.


Serves 4
