Power-packed popcorn sports bar

Fiber and protein from nutritious ingredients in a handy crispy bar -- and without corn syrup!

Ingredients: Makes 12 bars
 
2 quarts popped popcorn
1/2 cup sliced almonds
1/2 cup shredded coconut
1/2 cup chopped dried apricots
1/2 cup sweetened dried cranberries
1/2 cup roasted soy nuts (or shelled sunflower seeds)
3 tablespoons margarine
2/3 cup honey
1/4 cup brown sugar (light or dark)
2 teaspoons vanilla extract
1/2 teaspoon salt

Directions
1. Preheat oven to 300 degrees F.

2. Line a 13x9-inch pan with foil and spray lightly with cooking spray; set aside. Place popcorn, almonds, coconut, apricots, cranberries and soy nuts in a large bowl; set aside. In a small saucepan, heat butter, honey, brown sugar, vanilla and salt over medium heat.

3. Stir to blend and bring to a boil. Boil 2 minutes, stirring constantly; pour over popcorn mixture.

4. Stir to blend all ingredients and pour into foil-lined pan.

5. With damp hands, press mixture lightly and evenly into pan.

6. Bake 30 minutes or until lightly browned.

7. Cool in pan at least 3 hours before cutting into rectangles to serve.

8. Wrap individually in plastic wrap and store in an airtight container up to 2 weeks.

mod
this christmas i was hoping i could make a gingerbread golf course since my dad really likes golfing.(also i like cooking)i've already kinda designed it but i can't find a good recipe for gingerbread. can you help me? thnx!

 

Hey girl,

That sounds like a really cool idea! Here's a recipe for gingerbread cookies from GL: http://www.girlslife.com/post/2010/11/09/bake-a-BF-gingerbread-cookies.aspx. I assume that you would be able to make sheets of gingerbread (or whatever you need to make the golf course) instead of cutting out the boy shapes. Good luck!

MOD MOD MOD MOD I want to eat healthy, but I'm like a SUPER picky eater!!! do you have ideas that would taste sweet or even just good in general that's healthy???




Hey girl. I was a picky eater a few years ago too! If you are anything like me, you probably said you didn't like certain foods without ever trying them. This season, actually put in the effort to try foods that you have convinced yourself you don't like. Trust me, there will be something that find you actually do enjoy! Also, try to find ways you can "sneak" healthy foods into better tasting ones. For example, mix your broccoli in with your mashed potatoes-you can barely taste it! All of the food gets mixed together in your stomach anyway-why not mix it together on your plate! I like the recipes but I wish that they weren't soooo ummm what would you call it? I don't know actually but for picky people like me I don't like these recipesFrown I REALLY wish I didFrown But I don't.
