Fruity spinach salad

 
Ingredients:
½ cup sliced almonds (or about 2/3 cup whole walnuts—your choice)
1 tsp. butter
1 ½  tbsp. sugar
3 cups spinach
½ cup slice strawberries
½ cup raspberries
½ cup blueberries
½ cup feta cheese

Dressing Ingredients:
¼ cup cider vinegar
¼ olive oil
1 tbsp. Dijon mustard
2 tbsp. honey or maple syrup

What You'll Do:
Coat a small frying pan with the butter (swirl the butter around in the bottom of the pan to melt). Toast almonds for about 1-2 minutes. Add sugar and stir until almonds are coated and lightly brown. Take the frying pan off the heat, and let the toasted almonds cool a bit.  Then, toss them together with the spinach and berries. Crumble the feta on top. Mix together the dressing ingredients in a separate bowl and then pour (as much or as little as you like) on top of the salad. Toss everything together again to make sure the salad is well coated.
