We Tried It: Veggies for dessert (and one yummy recipe)

We know, we know: Sometimes it seems like you have to eat an entire farm just to get a day’s worth of veggies. Still, these green, red, yellow and orange treats are extremely important and are vital for a healthy diet. We tried a way to get just one more serving a day: eating greens for dessert.


There’s no sense in limiting veggies to lunch and dinner. Why not just replace some of the more unhealthy ingredients in our desserts with vegetables? I promise, it’s not nearly as gross as it sounds. This beet cake is totally delish.

Chocolate Beet Bundt Cake with Truffle Ganache Glaze

Ingredients
For the cake:
2 cups all-purpose flour (or substitute whole wheat pastry flour)
2 tablespoons unsweetened cocoa powder
1 teaspoon cinnamon
2 teaspoons baking soda
1 tablespoon Kosher salt
3/4 cup + 1/4 cup butter, softened and divided
1 1/2 cups packed dark brown sugar
3 eggs, at room temperature
4 oz semisweet chocolate, chopped
2 cups beet puree (about 6-7 small-medium beets roasted, peeled, and processed until smooth)*
1 tablespoon pure vanilla extract
1 tablespoon instant espresso powder

For the ganache:

6 oz semisweet chocolate, chopped
2 tablespoons unsalted butter, softened
1/2 cup heavy cream


Directions
Grease a bundt pan and dust with cocoa powder tapping out the excess. Preheat the oven to 375 degrees.


1. In a large bowl, combine the flour, cocoa powder, cinnamon, baking soda, salt and sift until evenly distributed. Set aside.


2. Beat 3/4 cup butter and the sugar in the base of a standing mixer until light and fluffy. Add the eggs in one at a time and let beat for 3-4 minutes
until doubled in volume.

3. While the egg mixture beats, combine the chocolate with the remaining butter and microwave 20 seconds at a time, stirring each time, until melted.
Stir until smooth and set aside.

4. Add the vanilla extract to the eggs, followed by the espresso, chocolate, and the beet puree and mix until well combined.

5. Add the flour mixture to the beet mixture and mix just until completely and evenly combined. Pour the batter into the prepared bundt pan with the batter angled so that it is an inch higher on the sides than in the center, and bake at 375 degrees  for about 50 minutes or until a tester inserted near the center comes out clean. Cool in the pan for 15 minutes before inverting on a wire rack.


6. While the cake is cooling, make the ganache by combining the chocolate and butter in a medium bowl. Heat the cream through gently just until it starts to bubble and pour over the chocolate. Stir slowly until the chocolate melts and the ganache becomes smooth and glossy.

7. Pour the ganache over the cooled cake and let set 15-20 minutes before serving.

To roast beets, scrub them thoroughly. Then, wrap the entire bunch of foal in foil and bake at 350 degrees until they’re soft (about 30-40 minutes).

MOD MOD MOD MOD MOD Please answer. I've been getting moderated for 3 days now! I can't go on my profile or anything and it's SO frustrating! When is my profile gonna be done getting moderated? Isn't supposed to only take like one day? Or an hour at the least? What's going on? Why is this taking so long? Thanks

MOD MOD MOD! one of my besties, lets call her J.A. you see, J.A. said she hated this guy for a year now, and one of her best and closest friends (and one of my best friends too) told me and ANOTHER one of my best friends T.G. that J.A. and the guy dated, kissed, and faked married each other. but then J.A. made a rude video about the guy, and the guy saw it. Now i think they're broken up, and they might get back together again. the friend who told me about this might tell J.A.'s mother because lately, J.A. has been acting meanly to the girl that told me this. i really don't want to get into where they ask people to pick sides. if they do ask me to pick a side, what should i do to get out of this mess and help them work this out? -katie P.S. 2 years ago, this same guy dated, kissed, and faked married another girl who moved to a new school, so i believe this story J.A.'s friend is true. Thanks for helping me out!

 

Hey chica! Sticky situation :/ Why don't you ask J.A. about some of this to find out if it is true, and why she is being mean to your other friend. That way if your friend does tell J.A.'s mom you can't say you didn't try to figure out what was going on with J.A. first. But, your best bet may be to stay out of the situation. This is a problem between J.A. and your friend, and it's not fair if you have to get involved. If they ask you to pick sides, tell them no way! You are friends with both of them and you want it to stay that way. You're not going to pick!

MOD, I have had the smallest room for eight years. The people who built our house made a mistake and made my room two feet smaller than it should be. Lately, I've been bugging my dad to finish the basement so my sister can move down there and I'll have her room. The reasons I keep giving him is she got a bigger bed when she was my age, she can have more things in her room, she can have more pillows while sleeping and I have outgrown my twin bed so I need a bigger one. My dad keeps telling me we don't have the money. He says he'll buy something every week but I know he won't get it done at that rate. He is also in school. How do I get him to start building it? Thanks!

 

Hey girl! This is a tricky situation because money is definitely an issue with alot of people. Sounds like you've done what you can to talk to him, and if he's so busy right now just may not be the time to start working on it. I understand if you need a bigger bed though! Will a bigger bed not fit in your room? Because you could always get a bigger bed for now and then in time he could start working on the downstairs. Hope this helps!
