We Tried It: Veggies for dessert (and one yummy recipe)

We know, we know: Sometimes it seems like you have to eat an entire farm just to get a day’s worth of veggies. Still, these green, red, yellow and orange treats are extremely important and are vital for a healthy diet. We tried a way to get just one more serving a day: eating greens for dessert.


There’s no sense in limiting veggies to lunch and dinner. Why not just replace some of the more unhealthy ingredients in our desserts with vegetables? I promise, it’s not nearly as gross as it sounds. This beet cake is totally delish.

Chocolate Beet Bundt Cake with Truffle Ganache Glaze

Ingredients
For the cake:
2 cups all-purpose flour (or substitute whole wheat pastry flour)
2 tablespoons unsweetened cocoa powder
1 teaspoon cinnamon
2 teaspoons baking soda
1 tablespoon Kosher salt
3/4 cup + 1/4 cup butter, softened and divided
1 1/2 cups packed dark brown sugar
3 eggs, at room temperature
4 oz semisweet chocolate, chopped
2 cups beet puree (about 6-7 small-medium beets roasted, peeled, and processed until smooth)*
1 tablespoon pure vanilla extract
1 tablespoon instant espresso powder

For the ganache:

6 oz semisweet chocolate, chopped
2 tablespoons unsalted butter, softened
1/2 cup heavy cream


Directions
Grease a bundt pan and dust with cocoa powder tapping out the excess. Preheat the oven to 375 degrees.


1. In a large bowl, combine the flour, cocoa powder, cinnamon, baking soda, salt and sift until evenly distributed. Set aside.


2. Beat 3/4 cup butter and the sugar in the base of a standing mixer until light and fluffy. Add the eggs in one at a time and let beat for 3-4 minutes
until doubled in volume.

3. While the egg mixture beats, combine the chocolate with the remaining butter and microwave 20 seconds at a time, stirring each time, until melted.
Stir until smooth and set aside.

4. Add the vanilla extract to the eggs, followed by the espresso, chocolate, and the beet puree and mix until well combined.

5. Add the flour mixture to the beet mixture and mix just until completely and evenly combined. Pour the batter into the prepared bundt pan with the batter angled so that it is an inch higher on the sides than in the center, and bake at 375 degrees  for about 50 minutes or until a tester inserted near the center comes out clean. Cool in the pan for 15 minutes before inverting on a wire rack.


6. While the cake is cooling, make the ganache by combining the chocolate and butter in a medium bowl. Heat the cream through gently just until it starts to bubble and pour over the chocolate. Stir slowly until the chocolate melts and the ganache becomes smooth and glossy.

7. Pour the ganache over the cooled cake and let set 15-20 minutes before serving.

To roast beets, scrub them thoroughly. Then, wrap the entire bunch of foal in foil and bake at 350 degrees until they’re soft (about 30-40 minutes).

MOD MOD MOD My family sometimes wants to get fast food. I cant change my dads mind when he wants a lottaburger. So what should I get when my family wants fast food? The fast food places we go to are wendys and Lottaburger. Are there any healthy choices? If you say salad my parents will think im worrying about weight which im not Im worrying about health im already really skinny and tall so does it even matter? Should I just get a burger and frys?

 

Hey girl, It's okay to indulge in some not-so-healthy fast food occasionally.  But it is also easier these days to find healthy options on the menu.  You could think about subbing a grilled chicken sandwich or wrap for a burger, and switching fries with a side salad or fruit.  Also, watch the condiments - some things like mayo can add a lot of fat.  If you're not sure what the healthy options are, check the restaurant's website.  It will give you a menu so you can browse the options ahead of time, and even gives you the nutrition info.  xoxo

MOD MOD MOD MOD : If you are one of the GL workers and you have a flat stomach PLEASE HELP ME . Ive always had a fat stomach and have been 150 lbs im 12 and 5'5. I Know its not healthy and im overweight for my age . Can you help me out with giving me a eating plan of options like seperated with breakfeast lunch dinner and snacks to help me loose this weight and maybe get to 130 or under. I need a worker thats really willing to help me i really need someone who wants to help me out . - Alyssah

 

 

Hey girly! For something like this, you really need to talk with your doctor. Your doctor can put you on a plan that's perfect for your body type, and your lifestyle.

hey girl! because it's a beet cake i'm not sure if you can substitute any other vegetable Frown , but i would definitely look into some other veggie treats that you can eat!

okay so i remember reading an article on GL about how milk is really good for you and stuff, but my body doesnt process dairy properly. i get a stomach ache and just dont feel well. (im not lactose intolerant, ive asked my doctor, so i dont know why this happens). so is there any way i can be able to get the calcium another way?

Here's a great idea I use alot. Have a smoothie for dessert instead, and blend some spinach into it as well. You can do this with any kind of smoothie, cuz u can't taste it at all! All it does is make the smoothie a little bit of a diff color, but it's a great way to get veggies.

Hey, happy holidays Smile I think I've asked this question before but I'm pretty sure it never got answered...anyway. My school gym uniform is a really light blue t shirt, but I sweat a lot on my back and its really gross. Is there any way that I can stop it from showing or happening at all? It's pretty embarrassing if I have sweat stains on my back :S




Hey girl, everyone sweats while playing sports so I wouldn't sweat it (no pun intended). For your arm pits, there's deodorant. For your back, I'd just let it go. Be sure to stay hydrated and you'll be fine. Everyone's sweating.

OK so i have this guy friend. He is 18 and i see him as a big brother. But we texted way too much. one day i was texting him and i said.... i don't think we should be texting that much. I said this because i didn't want my parents to get mad at me for texting a guy this much. I think he got mad at me for saying this and so he didn't even text me back to tell me what he thought about what i said. i really want to talk to him but he wont answer. What should i do?

MOD MOD MOD! one of my besties, lets call her J.A. you see, J.A. said she hated this guy for a year now, and one of her best and closest friends (and one of my best friends too) told me and ANOTHER one of my best friends T.G. that J.A. and the guy dated, kissed, and faked married each other. but then J.A. made a rude video about the guy, and the guy saw it. Now i think they're broken up, and they might get back together again. the friend who told me about this might tell J.A.'s mother because lately, J.A. has been acting meanly to the girl that told me this. i really don't want to get into where they ask people to pick sides. if they do ask me to pick a side, what should i do to get out of this mess and help them work this out? -katie P.S. 2 years ago, this same guy dated, kissed, and faked married another girl who moved to a new school, so i believe this story J.A.'s friend is true. Hey chica! Sticky situation :/ Why don't you ask J.A. about some of this to find out if it is true, and why she is being mean to your other friend. That way if your friend does tell J.A.'s mom you can't say you didn't try to figure out what was going on with J.A. first. But, your best bet may be to stay out of the situation. This is a problem between J.A. and your friend, and it's not fair if you have to get involved. If they ask you to pick sides, tell them no way! You are friends with both of them and you want it to stay that way. You're not going to pick!

MOD, I have had the smallest room for eight years. The people who built our house made a mistake and made my room two feet smaller than it should be. Lately, I've been bugging my dad to finish the basement so my sister can move down there and I'll have her room. The reasons I keep giving him is she got a bigger bed when she was my age, she can have more things in her room, she can have more pillows while sleeping and I have outgrown my twin bed so I need a bigger one. My dad keeps telling me we don't have the money. He says he'll buy something every week but I know he won't get it done at that rate. He is also in school. How do I get him to start building it? Thanks!

 

Hey girl! This is a tricky situation because money is definitely an issue with alot of people. Sounds like you've done what you can to talk to him, and if he's so busy right now just may not be the time to start working on it. I understand if you need a bigger bed though! Will a bigger bed not fit in your room? Because you could always get a bigger bed for now and then in time he could start working on the downstairs. Hope this helps!

Hey girl! Ask your mom about any medicine you can take to get rid of the congestion. Airborne is also a great source of vitamin C to help boost your immune system so that's also something else you could ask about. Make sure your drinking orange juice, or something else with Vitamin C and just keep eating healthy! Oh, and don't worry...it's not possible to be miserable in Disney, it's the happiest place on earth!! Have fun, I'm totally jealous you're going!!
