Busy vegetarian needs help!

I recently went vegetarian and I’m kinda busy, so I do not have lots of time to cook.  I eat mostly scrambled eggs and veggie burgers from the freezer.  I want to find quick vegetarian recipes that are actually healthy!

 

When it comes to vegetarianism, it’s way important to make sure you get all the vitamins and nutrients your bod needs to stay healthy.  Add a busy schedule on top of that, and it can get a little tough. 

 

For lunchtime, right in the middle of your hectic day, sandwiches and salads may become your BFFS.  Throw all your fave veggies and some hummus on whole grain bread for a super quick lunch on the go.  Got a little more time?  Toss together an awesome salad.  Opt for spring mix or spinach leaves over iceberg lettuce, which is made up mostly of water and SO not nutritious.  Throw on whatever you want and don’t be afraid to mix things up.  I love fruit and nuts on mine.  (Try craisins and pinenuts, or pears and candied walnuts, yum!)

 

When it comes to dinner, spend just a little more time making sure you include all the healthy good stuff in your meal.  Since you eat eggs, you’re a lacto-vegetarian (no animal meat, but yes to eggs and milk).  This makes it a bit easier to get the calcium and protein your body craves.  But, it wouldn’t hurt to work in foods that are high in protein, like tofu, nuts, beans, lentils and other soy products.  Another important nutrient is iron, which you can find in spinach, beets and dried beans.  For ideas on specific recipes, check out GL’s healthy recipes or ask other vegetarians you know to spill the beans about their fave dishes.

 

To make sure you’re being healthy about it, talk to your doc or a nutritionist about diet plans and multivitamins.  Think about ‘em as a safety check for your healthy ways.  Your bod is still growing, so you gotta make sure it’s getting the fuel it needs!

I'm a vegetarian too Laughing. But, I eat fish and dairy products so I am not a full vegan. I take a vitamin at night to help with getting my daily needs. I also eat a ton of noodles and fish tacos!(which i HIGHLY recommend)Veggie burgers and pizza and rice are good too. I also eat cereal and potatoes! I like being a vegetarian because I feel healthier and better about myself. Anemia is a huge deal for vegetarians and vegans so remember to eat dark greens, grapes, raisins, and other iron rich foods. If not, try a multivitamin. Explore your options, they have a huge selection at kroger marketplace! They have vegan chicken and corn dogs and chili! haha

MOD MOD MOD MOD MOD!!!! I've recently become vegetarian and I think Im doing pretty well. My mom is on board with it, but my dad, for some wierd reason, isnt. I understand that he's concerned about my health, but I'm honestly doing a really good job getting protein from eggs, milk, nuts, beans, and even fish. I even told him that Im getting my needed protein through all this, but appearently I need to get this "special" kind of protein from meat for me to grow. Ugh. Im not five. Isnt protein just protein? Anyway, how can I convince my dad that Im getting enough protein and that a vegetarian diet isnt necessarily an eating disorder?

Hey girly,

You need to sit down with both of your parents and talk about all this. Before you do though, try to get as much research as you can from the internet about protein and being a vegetarian. When you talk to your dad, be mature, calm and show him that you have put a lot of thought into this. Don't be afraid to ask your mom for help in talking to him too. Together, your maturity, information, and your mom's help should at least get him to think about it.

I'm a vegetarian, ever since about seven months ago. If you need recipes and ideas, e-mail Vegetarian Societies and if you have friends who are vegetarians, ask them.

You can also just get vegetable broth and just throw a whole bunch of vegetables in a pot, with an egg or two. It's really delicious.

Bean burritos, salads, and trail mixes are good, too. Just get creative. : )

This is super-cool! I'm not veg, but I don't eat a lot of meat, so I usually use eggs/ nuts/ other protein sources to get me full! I'd recommend Morningstar for veggie burgers, but if you have an hour or so on a Sunday, whipping up your own veggie burgers is best! I have a fab recipe I'd be happy to give out, and the best thing is they freeze REALLY well, so you can freeze them individually, and have like 12 awesome meals, which are lower in sodium and fat, a suprising addition to a lot of veggie burgers!
