Looking for an easy snack or party bite? Try whipping up
Bailee Madison’s delish asparagus rollups! “When people take their first bite,”
she says, “their eyes get huge and they all say, ‘Mmm, what are these?’ I love
knowing they enjoy them”—and we bet you will, too!
Ingredients:
24 fresh asparagus spears
1 8-ounce package of cream cheese, softened
1 4-ounce package of crumbled blue cheese
2 tbsp mayonnaise
1 tbsp fresh chives, chopped
12 bread slices, trimmed
12 thinly sliced deli ham slices
1/3 cup of butter or margarine, melted
Paprika
Directions:
1. Snap off the tough ends of the asparagus. Arrange the
spears in a steamer basket over boiling water. Cover and steam for 4 to 6
minutes or until slightly tender. Remove from the steamer and cool on paper
towels.
2. Stir together the cream cheese, blue cheese, mayo and
chives.
3. Roll each slice of bread with a rolling pin to flatten.
4. Spread 1 side of each slice with 2 tbsp of the cream
cheese mixture, and top each with 1 slice of ham. Place 2 asparagus spears,
tips pointed toward opposite ends, on one end of each bread slice. Roll up and
place, seam side down, on a greased baking sheet. Brush with melted butter and
sprinkle with paprika.
5. Bake at 400 degrees for 12 minutes or until golden brown.
