A day at the beach—surf, sand and…ugh, greasy food. Ditch
the boardwalk hotdog and fries and brown bag it, babe. Sand in your sammie not
exactly your cup of tea? Pack a cooler with these tasty lunch bites—they’ll
keep ya feelin’ good all day long.
Chill chopped salad
Grab a big Tupperware bowl and toss in two handfuls of
chopped romaine lettuce. Then, dig through your refrigerator to see what
goodies you have lying around. The best thing about a chopped salad is that anything
goes. We love slicing up lunch meat or leftover protein from last night’s
dinner, hard boiled eggs, avocado, apples, cheese—whatever sounds good and is
readily available. Pack a bottle of dressing and you’ve got yourself an instant
entrée.
Crunch much?
Instead of a bag of chips or handfuls of Goldfish, bring
along a DIY trailmix. A few of your favorite nuts—roasted, unsalted or raw—pack
a protein and healthy fat punch. Add in dried fruit—we’re digging cranberries
and pomegranate—and a hint of something sweet, like cocoa nibs or super dark
chocolate chips.
Stick it!
There’s just something fun about eating food off a stick.
Grab a pile of skewers and get spearing. You can stick to fruit (think:
berries, oranges, pineapple, kiwis and grapes), something a bit more savory
(like a caprese skewer with cherry tomatoes, mozzarella cheese and fresh basil)
or something sweet (like bananas, dipped in melted chocolate and frozen—yum!).
