Sure, summer sun is pretty stellar, but you can’t beat
fall’s delicious eats. Cinnamon, apples and pumpkin? Yum! Here are four ways to
make your before-school breakfast bites fall-fabulous in a snap.
On a bagel…
You can whip up this easy spread the night before. Stow it
in an air-tight container and eat it up on the fly. Here’s what ya have to do:
Mix half a cup of pureed pumpkin with an 8-oz package of cream cheese. Add a
teaspoon of pumpkin pie spice (a mixture of cinnamon, ginger, nutmeg and
allspice) and sugar to taste, then mix until combined. Use the spread to top whole-grain
bagels, toast, English muffins and scones.
With your yogurt…
Low-calorie, low-fat, high-flavor pumpkin is loaded with
good-for-ya vitamins and minerals, making it a great add-in for your daily
yogurt fix. Stir a spoonful of pumpkin puree into a container of vanilla
yogurt. Add cereal, granola or nuts, and top with festive Halloween sprinkles.
In your oatmeal…
Opting for a morning meal that’ll warm ya up from the tips
of your ears all the way down to yours toes? Try this dish: Make regular
oatmeal, per usual, then stir in a heaping spoonful of applesauce or pumpkin
puree. Add brown sugar and ground cinnamon to taste plus raisins.
With pancakes…
For special weekday breakfasts or Saturday morning feasts,
try spicing up your stack of pancakes like this: Mix half a cup of pureed
pumpkin or applesauce with a teaspoon of ground cinnamon, then fold into your
favorite pancake batter. Make pancakes according to directions and drizzle with
maple syrup or top with apple butter.
