Keep it Green this St. Pattys Day!

Saint Patty’s Day is comin’ up and we’re obsessed with all things green. From crunchy celery to oh-so-sweet grapes, we’ve got enough green goodies to help you celebrate all day.

Brilliant Breakfast

Green Eggs and Ham
Ok, not exactly. Top your a.m. eggs (fried, scrambled, however you like ’em) with some salsa verde (look for it in the Mexican food aisle in the grocery store). Have some toast or veggie sausage on the side.

Or test out our bfast burrito with a green salsa instead of the traditional red one.

Spectacular Snack

Broc ‘n’ Guac
Way green and packed with fiber! Cut up some broccoli and dip it in our famous guacamole (http://www.girlslife.com/post/2009/02/20/Recipes.aspx). Or, indulge a li’l and top your fave lime-flavored tortilla chips in the dip. Um, yum!

The Amazing Appetizer

Veggie Platter with Green Dips!
Chop up a buncha green veggies, like broccoli, celery, green peppers and zucchini! Arrange them on a platter to munch on with friends and fam before din. Serve with a pre-made spinach dip or tabouli (a Middle Eastern salad that’s packed with healthy herbs that you can buy at the grocery store).

Lucky Linguini
I got this fabulous, healthy recipe from a friend and have loved it for a quick ‘n’ easy din ever since! Saute 1-2 zucchini with 1 tsp. lemon juice and 1 tbsp. olive oil. Boil up a pot of water then add 1 pound of whole wheat pasta. Cook, per instructions on the box. Strain and mix in 1 cup green peas, the zucchini and some pesto sauce to taste for some extra green pizzazz. Enjoy with the fam and refrigerate extras for leftovers.

Delectable Desserts
Freeze up some green grapes as the pot o’ green gold at the end of your day. Yum!

Healthy St. Patty’s Day Wishes to all! XoXo
