We all know toting your own lunch it is the way to go – you save money,
conserve environmental resources and you get to choose what you’ll be
chowing down on. But bringing PB&J day after day gets boring fast.
Here are three easy-to-make, healthy and yummy lunches to start the year
off right.
Mini subs
Push aside the sliced bread and
use a hot dog bun to create an adorable sub sandwich – load up your
favorite toppings, like grilled chicken, lettuce, tomato, cheese,
dressing, etc. Bonus if you make one that’s all veggies.
That’s a wrap
Sick
of sandwiches? Try a wrap-a-roo. Put together a Tex-Mex option with
chicken, beans, rice, salsa, cheese and salsa in a tortilla for some
South-of-the-Border fun. Looking for vegetarian fare? Pick your favorite
greens, add a little salad dressing and voilà! A fresh lunch option
that you can switch up a little every day.
Slurpin’ some soup
Grab a thermos and fill it up the night before with an easy to make soup recipe,
like this one.
Super quick to make – and perf to grab and go in the morning!
