There’s nothing we love more than a slice
of chocolate chip banana bread. But when it comes to the holidays, we’ve gotta
face reality: cranberries are just so
much more festive! Add a tart surprise to your cake-like fave for a treat that’s
oh-so worthy of anything from a breakfast bite to a family bash.
Ingredients:
1 package of white cake mix
4 oz cream cheese, softened
1 egg
1 1⁄2 cups mashed ripe bananas (3 to 4
large bananas)
1 1⁄2 cups fresh cranberries
Directions:
Preheat oven to 350 degrees. In a large
mixer bowl, combine cake mix, cream cheese, egg and bananas. Beat on low speed
until smoothly blended, about 2 minutes. Batter will be stiff. Fold in
cranberries. Spread batter into two greased and floured 8 1/2-inch by 4 1/2-inch
loaf pans, dividing evenly. Bake for 45 to 50 minutes or until a tester
inserted in center comes out clean. Cool for 20 minutes in pans on a wire rack,
then remove loaves and cool completely.
