3-INGREDIENT PUMPKIN FUDGE🎃🍫 Anyone remember my Butternut Fudge? Well this pumpkin version may even be better (but I'll let you decide that). Just 3 simple, clean, healthy ingredients you need to make the magic happen! 1 small pumpkin (AKA: "sugar pumpkin" or "pie pumpkin") 3/2 cup @santabarbarachocolate's coconut sugar sweetened discs (code: lilsipper15) 1 1/2 Tbsp of @furtherfood's grass-fed gelatin (code: lilsipper) . Slice pumpkin in half and roast face down until tender (about 1 hour at 400 F). Remove seeds and skin, and place 1/2 of the pumpkin in a blender while still hot (important to do this while pumpkin is warm). Add @santabarbarachocolate and blend until smooth. Add @furtherfood gelatin and blend again. Pour puree into a small dish and refrigerate 4 hours or overnight until firm. Slice and enjoy! #lilsipper #eatbettergofurther #furtherfood #fudge

It's officially spooky season, which means it's time to turn on your oven and bake pumpkin-flavored everything! Baking influencer Bethany Ugarte’s (@lilsipper) 3-ingredient pumpkin fudge will satisfy your sweet tooth and get you in a festive mood. Plus, it is healthy for you! As we head into the winter season, pumpkin has your back as it will help improve your skin and strengthen your immune system.

All you need to whip up this tasty treat is: 

  • 1 small pumpkin (AKA: "sugar pumpkin" or "pie pumpkin")

  • 1 ½ cup chocolate of your choice 

  • 1 ½  Tbsp gelatin 

The steps are also pretty simple to follow: 

  1. Slice pumpkin in half and roast face down until tender (about 1 hour at 400 degrees F). 

  2. Remove seeds and skin, and place 1/2 of the pumpkin in a blender while still hot (it is important that the pumpkin is still hot so that it melts the chocolate!)

     Pro tip: save the pumpkin seeds, rinse them off and throw them in the oven with some salt and seasoning for another *amaze* snack! 
  3. Add chocolate and blend the mixture until it is smooth. 

  4. Add gelatin and blend everything again. 

  5. Pour the mixture into a small dish. Let it sit until it is cooled off. 

    Pro tip: add a sprinkle of sea salt on top to balance out the sweetness!
  6. Refrigerate 4 hours or overnight until firm. 

  7. Slice and enjoy!
