These chocolate truffle cookies are perfect for your besties this Galentine's Day

If you want to make your buds smile this February 13, look no further than these tasty truffle cookies. Loaded with tons of chocolate, each batch yields 4 dozen cookies—so you have plenty to share while still keeping a few for yourself and your fam. You can also pop some in the freezer and save them for later, so you can *always* satisfy your chocolate cravings.

To make this, you will need:

-2 cups semisweet chocolate chips, divided

-4 ounces unsweetened chocolate, chopped (try Baker's 100% Cacao Unsweetened Chocolate Baking Bar, 4oz)

-1/3 cup butter

-1 cup sugar

-3 eggs

-1 1/2 teaspoons vanilla extract

-1/2 cup all-purpose flour

-2 tablespoons baking cocoa

-1/4 teaspoon baking powder

-1/4 teaspoon salt

-Confectioners' sugar (for topping after baking)

Directions:

-Combine 1 cup chocolate chips, unsweetened chocolate and butter in a microwave-safe bowl. Microwave in 30-second increments until melted and stir in between each heating. The bowl will be hot, so be sure to handle it carefully with a pot holder or oven mitt. Continue melting until mixture is fully combined and smooth. Let cool for 10 minutes.

-While chocolate mixture is cooling, use a large bowl to beat sugar and eggs for 2 minutes. Then, beat in the melted chocolate mixture. Add vanilla extract.

-Whisk together flour, baking cocoa, baking powder and salt in a different medium-sized bowl. Slowly beat into the chocolate and sugar mixture.

-Stir in the other cup of chocolate chips. Everything should be combined now!

-Cover bowl with foil and refrigerate for at least 3 hours. Feel free to check it earlier; it should be solidified enough for you to handle it.

-Preheat oven to 350°. Lightly flour your hands and form the cookie dough into small balls, roughly 1-inch each. Set the cookie dough balls on ungreased cookie sheets about 2 inches apart.

-Bake for 10-12 minutes. Cookies should be slightly puffy. Let cool 3 minutes before removing from sheets. Lightly dust or roll in confectioners' sugar, depending on your preference.

-To gift to your buds, layer cookies in festive tins and attach a sweet note or card. Happy Galentine's Day!
