Punched Up Pasta

Take your typical pasta dish for a twist. This easy no-bake recipe will give you that boost of energy you need to make it through the final weeks of winter.  Not a fan of zucchini?  It’s okay, just leave out what you don’t like and the pasta will taste just as yummy!

What You'll Need:

1 lb. small seashell pasta
¼ cup diced red pepper
¼ cup shredded carrot
½ cup chopped broccoli
1 tomato, diced
¼ cup finely chopped red onion
¼ cup chopped zucchini
1 cup bottled creamy Italian dressing
1 tablespoons dried parsley
salt and pepper to taste

What You'll Do:

1. Cook the pasta as directed on the back of the package.  Pour cooked pasta into a colander, rinse and cool.
2. Add remaining ingredients, mixing gently, so as not to tear the pasta.
3. Refrigerate at least one hour.

Our tip: To make your recipe a little gourmet, save some of the parsley till the end and sprinkle it on top with some grated parmesan cheese!
