Brie and Pear Panini

A cold pear and Brie sammie is perf for a crisp lunch (and more sophisticated than what the caf serves). Got some extra time? Follow our instructions for a pressed panini that’ll warm up your afternoon. Yum!

Ingredients for two sandwiches:

1/3 of a small onion
Handful of baby spinach
2 ounces Brie cheese
1 Bartlett pear
1 tsp. butter
Cooking spray
2 ciabatta rolls (you could also use sourdough bread or a kaiser roll)

Thinly slice the onion, Brie and pear. In a small nonstick pan, melt the butter over medium heat. Add the onions and cook until they’re translucent (it’ll take about 5 minutes). Arrange the cheese, baby spinach, pear and onion in the rolls. If you’re gonna eat your sandwich cold, it’s ready!

Want a hot sammie?
Spay a nonstick pan with cooking spray (like Pam). Arrange the sandwiches in the pan and turn the stove on medium. After it’s been cooking for 2-3 minutes, flip it over and cook the other side for 2-3 minutes. Serve with a side of carrot sticks.

Want to make a pressed panini?
To press your panini (like the ones they serve in many cafes), get an extra nonstick pan and four canned goods from the pantry. After you place the sandwiches in the pan, place the other pan on top of them. Put the cans on the top pan, to give added weight and press the sandwich. Cook for 2-3 minutes on each side (just remove the top pan and cans to flip) and serve ‘em up hot.
