CRISPY, CREAMY ICE CREAM SANDWICHES

(Makes 12 ice cream sandwiches)
What You'll Need:

1/4 cup (1/2 stick) butter or margarine (do not use soft-spread margarine)
1 (10-ounce) bag marshmallows
1 teaspoon vanilla
6 cups crispy rice cereal
1/2 cup decorating sprinkles or multicolored coated chocolate candies (optional)

Ice cream, sorbet, or frozen yogurt
What You'll Do:

-Spray a medium saucepan with nonstick cooking spray.
-Melt butter or margarine with marshmallows in pan, stirring often. Make sure kids are away from the heat.
-Stir in vanilla and add cereal before removing from heat.
-Stir together until a large ball begins to form. Add candies or sprinkles, if desired. Keep the kiddies involved by asking them to help with sprinkles!
-Scoop mix into a 9 x 13-inch pan sprayed with nonstick cooking spray.
-Flatten, then chill in the refrigerator for 10 minutes.
-Remove from refrigerator and cut into 2-inch squares.
-Put a small scoop of ice cream on top of one square and top with another square. Trim off extra ice cream so it is square.
-Press together and eat right away!

Voila! Ice cream sandwiches!
