GL FOOD: Greek Pasta
Super simple pasta that’s perfect for non-culinary geniuses. If you can boil water and hold a knife, you are more than qualified to get Emeril in the kitchen. You got your breads, veggies, dairy, and good fats all in one…..practically a balanced meal!
One package of linguine
One container of cherry tomatoes
One container of Kalamata olives
One block of mozzarella cheese
Extra Virgin Olive Oil
Using a 2 qt. saucepan, bring 4 cups of water to a boil. Add the package of linguine, While the linguine cooks, cut the cherry tomatoes in half lengthwise and cut the mozzarella into ½ inch chunks.
Once the linguine has fully cooked, drain them and let them cool. Put them into a large serving bowl, add the mozzarella, tomatoes and olives. Finish with a drizzle of olive oil and salt and pepper to taste.
